Farm to Table Collective began as a vision shaped by decades of authentic, experience-driven travel.


It Founded in 1995 as Costa Rica Tours, our roots lie in sustainable tourism, connecting travelers to the cultural and natural richness of places like the volcanic farms of Costa Rica and the spice routes of India. Over the years, we've served clients across the U.S. and globally—including respected institutions such as National Geographic, Shell, and top universities seeking meaningful, immersive experiences. What started as eco-tourism has evolved into something deeper:
A movement that blends storytelling, sustainability, and soulful encounters.

Today, as Farm to Table Collective, we’re building a global network of farm-based experiences, artisan products, and small producers—from organic dairy farms and home-based cooking classes to desert-inspired rituals using traditional ingredients like camel milk.

Whether it’s a culinary workshop in Portugal or a visit to a camel farm near Dubai, every experience is curated to inspire connection, trust, and an appreciation for local heritage.

We also support farmers and artisans who lack a digital presence—helping them grow through visibility, e-commerce, and community.

Meet Our Founder – Nidia Zúñiga

With more than 30 years of experience in international tourism, aviation, and sustainable travel, Nidia M. Zúñiga brings a rich global background and a deep passion for authentic cultural connection.

Her career began in the airline industry, where she held leadership positions with British Airways, Continental Airlines, and Lufthansa, overseeing marketing and operations across Latin America. In 1995, she founded Costa Rica Tours, later evolving into Costa Rica Earth, a boutique travel company known for curating immersive eco-cultural journeys throughout Central America.

Nidia has led programs for clients ranging from National Geographic to universities, families, and independent travelers seeking meaningful experiences. As a certified member of ACOPROT (Costa Rica’s Tourism Professionals Association), her work has always reflected a commitment to sustainability, heritage, and high-touch service.

Today, through Farm to Table Collective, Nidia is building a global platform that uplifts farmers, artisans, and small producers—offering farm-based travel, culinary and cultural experiences, and a new line of handcrafted, natural wellness products inspired by traditional rural practices.

Whether connecting visitors to a cacao farm, a home kitchen in Portugal, or an emerging artisan brand, her mission remains the same:
